Hanoi – styled Grilled fish (Cha Ca) is usually made from the fleshy sweet water fish fillet (Hemibagrus, Lentils, Catfish, etc) The fillet is cut into pieces and well-marinated with fresh turmeric, galangal water,  a little bit Vietnamese shrimp paste sauce (mam tom) , fermented cold rice , salt and pepper for at least 4 hours, then sandwiched into pairs of bamboo. The catfish will be more flavorful and tasty if it is grilled on the charcoal grill. With this delicious dish, you can enjoy with fresh rice vermicelli, roasted peanut, local herbs (coriander and Vietnamese basil), white shallot and pouring sauce which are two types of pouring sauce, depends on your taste. The first sauce is fish sauce with sweet and sour favor. The second one is shrimp paste mixing with sugar, a bit vinegar and lime juice. You should enjoy Grilled fish when it is still hot.

Grilled chopped squid cake (Cha Muc) is a specialty of Ha Long in Quang Ninh province, Vietnam. Apart from freshly caught squid and cuttlefish, the only other ingredients to this delightful delicacy is lard, fish sauce and black peppercorns. The ingredients are first painstakingly pounded using a mortar and pestle into a springy paste. Next, individual pieces are cut from the paste and shaped into thick discs by hand. Finally, it is briefly deep fried to lock in the freshness. To heat up Cha Muc for serving, deep fry in hot oil until light brown while turning the pieces constantly. It can be eaten as is, with chili sauce or a dipping sweet and sour sauce made from fish sauce, vinegar and sugar.
